The red one is raw. It’s prepared by breaking it up and mashing it and then cooking it over a fire. The result is a bright red sauce that is reminiscent of tomato paste in texture and taste. The brown one has already been roasted. You eat it by breaking off a little compartment, breaking that open with your teeth, and then eating the grey flesh inside which tastes a bit like almond paste.
